The Moselle River extends across north-eastern France, south-western Germany, and eastern Luxembourg. It is home to the biggest Riesling crop area in the world. The most classic Riesling wines are found along the winding river gorge. The Moselle and the Rhine together produce 70% of all German Wine.

The main 3 classifications to know in the Mosel: Qualitatswein (QbA), Pradikatswein, and VDP.
Qualitätswein Bestimmter Anbaugebiete (QbA)
Meaning "quality wine from designated cultivation areas." Producers may add sugar to these wines when grapes don’t meet the minimum levels of natural ripeness at harvest time. Usually a producer's basic level wine, inexpensive and meant for everyday drinking, though there are some exceptions. Riesling wines sourced from all over the Mosel.
Pradikatswein
Prädikatswein is divided into five classes of ascending ripeness at harvest:
(a) kabinett - based on the ripeness level and sugar content of the grapes. At the entry level of Prädikatswein, the highest group of quality German wines, kabinette are usually low in alcohol, with crisp acidity. The wines can be dry, halbtrocken (half-dry) or sweet. You will find a great deal of Mosel wines in this category.
(b)spätlese, based on the ripeness level and sugar content of the grapes. Meaning "late harvest," spätlesen are usually richer than kabinette-level wines because the grapes contain a higher concentration of sugar at harvest. The wines can be dry or sweet.
(c )auslese, based on the ripeness level and sugar content of the grapes. Auslesen are made from individually-selected bunches of very ripe grapes that have higher sugar concentrations than those selected for spätlesen, but lower than those selected for beerenauslese. Auslesen are nearly always sweet wines but can be fermented in drier styles.
(d) beerenauslese (including eiswein) based on the ripeness level and sugar content of the grapes. Beerenauslese are made from individually selected grapes that are very ripe. Usually these grapes have been affected by Botrytis cinerea, or noble rot, further concentrating their high sugars. These wines are rare and costly.
(e) trockenbeerenauslese. based on the ripeness level and sugar content of the grapes. Trockenbeerenauslese means literally "dry berry selection." This very sweet dessert wine is made from individually selected shriveled grapes that have the highest sugar levels with flavors concentrated further by the fungus Botrytis cinerea, or noble rot. Trockenbeerenauslese rank among the greatest sweet wines in the world.
Sugar is never added to these wines. The Prädikatswein classification was formerly known as Qualitätswein mit Prädikat.
The VDP is an association of German wine estates that classifies wines by the quality of the vineyard. While the association has invited only about 200 wineries in Germany, you will see these vineyard classifications on the neck of a bottle of Mosel Riesling.
There are over 500 named vineyard sites in the Mosel Valley, the best way to select some of the better vineyards is to look at areas that face the sunlight and aim for the vineyards on the hills rather than flat land as they are more susceptible to sunlight.
